Bright, citric, and floral. Yirgacheffe is the coffee that taught us washed Ethiopians could taste like tea and stonefruit at the same time. We source this lot through a long-running relationship with a cooperative in the Kochere woreda — twelve-month forward-bought at 38% above C-market, with full traceability down to the washing station.

Brewing. Best on a pourover or AeroPress. We recommend 1:16 ratio, 200°F water, medium-fine grind. Not our top pick for espresso unless you like ultra-bright lactic notes (some do, we don't).
