Why this setup. The V60 has the longest learning curve of common pourover devices and the highest ceiling of brew quality. The Chemex is more forgiving but the V60 will teach you what good pourover technique feels like. After 3–4 weeks of daily brewing you'll be making coffee comparable to a $7 café pour.
